In order to get a UK life insurance policy you will need a UK bank account and address. It is possible for some non domiciled people to arrange a life insurance policy, if they have retained interest within the UK e.g. children, mortgage, business, etc. Foreign nationals may be able to arrange a UK life insurance policy for financial interests such as IHT liability planning and shareholder protection.
If you spend a significant amount of time outside of the UK, you may need to look at a specialist provider who can offer you Life Insurance. It is likely that you will be asked to write the policy into Trust, to ensure that any claim proceeds are retained within the UK.
